Chef In The Spotlight
Byron McMorris, Chef At Port Clinton’s Pub 221
It is nearing the dinner hour, and the Port Clinton area is being pummeled by an icy February rain driv- en horizontally by 35 mph gusts of a relentless, un- forgiving west wind. It is barreling across the frozen lake. Despite the fact that it has become such a hell- ish night, my husband and I have gone ahead with our plans to grab dinner out and watch the Purdue Boil- ermakers play the Mary- land Terrapins. We head into town, find a parking spot close to the Madison Street eateries, and duck into Pub 221. Shaking off the rain, we enter a cozy denofcasualdining,multi-
ple flat screens, an inviting bar and a menu overflow- ing with comfort food and BBQ. Mouth-watering aro- mas emanating from the kitchen leave no doubt that someone is back there cook- ing from scratch. Ah yes... this...this indeed, is what we were looking for.
Just after Purdue tips off, we are savoring de- liciously healthy collard green eggrolls, tender and juicy pulled pork with a BBQ sauce that tastes like a trip to Kansas City, fresh old-fashioned slaw, lusciously creamy mac and cheese, and chicken wings done right. Our taste buds immediately realize that
they are in good hands “I have loved to cook here at Pub 221, and those since I was five years old,” hands belong to life-long Byron began as he and I sat Chef Byron McMorris.
